No summer cookout is complete without a satisfying BBQ dessert. The right dessert is the cherry on top of any meal, but BBQ desserts are just that bit better. They’re summer specials, and most are so easy to do while everything else is grilling. Whether you’re looking for something light to follow up a heavy meal or want to fill the last gap of hunger in your garden, one of our BBQ desserts is sure to please. Gooey Grilled Brownies

bbq brownies Brownies are always a hit, but these grilled slices of heaven will go down a treat. With real chocolate and cocoa, this grilled brownie recipe is fudgy, gooey and completely tasty. And, if you don’t fancy breaking out the BBQ but have a craving for something sweet, you can whip up these brownies on the grill of your oven too!

You Will Need:

    • 85g unsalted butter
    • 43g cornflour
    • 32g quality cocoa powder
    • ½ tsp fine sea salt
    • 320g chocolate chips, separated
    • 96g caster sugar
    • 1 tsp vanilla extract
    • 3 large eggs
    • Extra chocolate chips for decorating
    • Makes 12 brownies

How To:

    1. First, whisk the corn flour, salt and cocoa powder together in a bowl.
    2. Next, in a large, microwave-safe bowl, microwave 75g of the butter and ¾ of the chocolate chips together in 30-second increments. Stir after each blast and repeat for about two minutes until the mixture is smooth. Leave to cool for 5 minutes.
    3. Once cooled, add the sugar and vanilla to the butter mixture and whisk well. Then, add the eggs, one at a time, and mix until combined. Finally, add the corn flour mixture and stir vigorously until smooth, then add the last of the chocolate chips.
    4. Then, pour the brownie mixture into a greased baking tray. Sprinkle the extra chocolate chips over the top.
    5. Finally, grill the brownies. Place them on the BBQ covered with foil and grill for about 45 – 40 minutes until a tester pick comes out with only a few crumbs. Once cooked, remove from the grill and leave to cool before serving with whipped cream and fresh fruit.

Strawberry Cake Kebabs

BBQ desserts can sometimes be quite heavy, but these strawberry cake kebabs are light, tasty and fairly healthy. Made up of a pound cake (which you can buy or make yourself beforehand) and plenty of scrummy fresh strawberries, these strawberry cake kebabs will be an instant hit with all ages. And, with only 5 ingredients, you’ll love making them too!

You Will Need:

For whipped cream

    • 2 tbsp icing sugar
    • ½ tsp vanilla extract
    • 250 ml double cream

For kebabs

    • 454g fresh strawberries
    • 6 skewers
    • Makes 6 skewers

How To:

    1. First, make the whipped cream. Add the icing sugar, vanilla extract and double cream into a large bowl and whip until medium peaks begin to form – about 3 minutes on medium speed. Once the mix begins to hold its shape, it is done! You can then store it in the fridge until you are ready to serve your kebabs.
    2. Once you’re ready, you can put together the strawberry cake kebabs. Start by slicing your pound cake into small cubes.
    3. Then, wash the strawberries, pat them dry and remove any leaves and stems.
    4. Next, put your kebabs together. Thread the pound cake and strawberries onto the skewers one after the other.
    5. Finally, grill them on the BBQ. Cook your kebabs and turn them regularly until the cake is golden brown on all sides. This should take no longer than 2 minutes, so don’t leave these unattended!
    6. Once cooked, remove the strawberry kebabs from the heat and serve them up with the whipped cream.

BBQ Pineapple Sundaes

Quick and simple, a round of these BBQ desserts are the perfect finish to a tasty BBQ meal and should be the choice of the day if you don’t want to spend all your time sweating over your fire pit or BBQ. You’re only two steps away from one of the tastiest BBQ desserts you’ve ever tried!

You Will Need:

    • 4 pineapple slices
    • 4 scoops of ice cream, vanilla or another preferred flavour
    • Dulce de leche or caramel for drizzling
    • 2 tbsp shredded coconut, lightly toasted if preferred

How To:

    1. First, grill the pineapple on your BBQ. Place the pineapple slices on your BBQ and char them on both sides, around 1 minute per side.
    2. Then, put the dessert together. Place the pineapple slices on a plate, and top them with the ice cream and dulce de leche. Top with the shredded coconut and serve immediately.
