Simple BBQ Skewers Recipe

Here’s our easy BBQ skewers recipe. With a lovely mix of lamb and prawns doused in a fun, spicy marinade, this recipe is one for the records! To get the full flavour of the lamb, you should marinate it overnight. So, prepare your marinade the night before your BBQ, soak the lamb as instructed, and then refrigerate the leftover marinade. You can use this on the prawns the following day.
Recipe Ingredients:
For The Kebabs:
12 small wooden skewers
2 tsp fennel seeds
2 tsp ground cumin
2 tsp smoked paprika
2 garlic cloves, crushed
1 tbsp red wine vinegar
2 tbsp olive oil
4 lamb leg steaks, sliced into small pieces
1 pack of prawns
Salt and pepper
For The Dip:
20g flat-leaf parsley leaves, chopped
1 garlic clove, crushed
1 shallot, diced
1 tbsp crushed chilli flakes
4 tbsp olive oil
2 tbsp sherry vinegar
How To:
- First, soak your wooden skewers in water for 10 minutes. While they soak, make your marinade. Mix the fennel seeds, cumin, paprika, garlic, 1 tbsp of the olive oil, red wine vinegar and a pinch of salt together in a small bowl.
- Then, separate the lamb and prawns into two separate bowls. Pour two thirds of your marinade over the lamb and the final third over the prawns. Leave the lamb to marinate overnight and the prawns for 2 hours before cooking.
- Once the lamb and prawns have marinated, make the skewers. Thread one piece of lamb onto each skewer, then thread a prawn on top of each one. Repeat until you have 12 full kebabs.
- Before cooking your lamb skewers, make the dip. Mix together all the dip ingredients with a pinch of salt and pepper in a small bowl. Then set aside.
- Finally, cook your lamb skewers on your BBQ or firepit. Brush your skewers with the remaining olive oil then add to your grill. Cook them for 2 – 5 minutes on each side, or until the internal temperature of the lamb reaches at least 55°C. Serve immediately with the dip.
